Spinach Artichoke Dip-Chicken Pizzas

Ingredients

  • 10 slices bacon, chopped
  • 1 (10-oz) pkg frozen chopped spinach
  • ¾ of an (8-oz) block cream cheese, softened
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 (12-oz) jar small artichoke hearts, drained and chopped
  • 1 cup freshly shredded Parmesan cheese
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 1 tsp garlic salt
  • 2 cups chopped cooked chicken
  • 1 (15-oz) pkg ancient grain pizza crusts (such as Brooklyn Bred)

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat until crisp; drain.
  2. Cook spinach according to package directions. Squeeze between paper towels to remove excess moisture.
  3. Preheat oven to 425°F. Stir together cream cheese, sour cream, mayonnaise, spinach, artichokes, Parmesan, 1 cup mozzarella, garlic salt, and chicken.
  4. Spread on pizza crusts on a large baking sheet. Sprinkle with bacon and 1 cup mozzarella. Bake 12 minutes. Cut into squares.

  • ½ lb seedless red grapes
  • 2 large apples

Side Dish Instructions

  1. Separate grapes into small clusters. Thinly slice apples.
