Pork Medallions Braised in Rustic Tomato Sauce

Ingredients

  • ½ lb pork tenderloin, cut into ¼-inch-thick slices
  • ¼ tsp pepper
  • 2 tsp olive oil
  • 1 (8-oz) pkg sliced mushrooms
  • 1 clove garlic, minced
  • 1 (14.5-oz) can no-salt-added diced tomatoes
  • ¼ cup halved pitted kalamata olives
  • ½ tsp dried oregano
  • ¼ tsp salt

Instructions

  1. Sprinkle pork with pepper. Heat oil in a skillet over medium-high heat, swirling to coat. Brown pork 1 to 2 minutes per side; remove from skillet, and keep warm.
  2. Add mushrooms to pan. Cook 8 minutes or until browned and tender, stirring frequently.
  3. Add garlic, tomatoes, olives, oregano, and browned pork. Cook 15 minutes or until sauce is thickened; stir in salt.

Side Dish Ingredients

  • 2 oz yolk-free egg noodles
  • ½ lb green beans, trimmed
  • 1 Tbsp extra virgin olive oil
  • 1 tsp dried basil
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook noodles according to package directions.
  2. Arrange green beans in a steamer basket over boiling water. Cover and steam 6 minutes or until crisp-tender. Toss hot beans with oil, basil and salt.
  3. Serve noodles and beans alongside pork.
