Pork Medallions Braised in Rustic Tomato Sauce
Egg Noodles and Herbed Green Beans
Ingredients
- ½ lb pork tenderloin, cut into ¼-inch-thick slices
- ¼ tsp pepper
- 2 tsp olive oil
- 1 (8-oz) pkg sliced mushrooms
- 1 clove garlic, minced
- 1 (14.5-oz) can no-salt-added diced tomatoes
- ¼ cup halved pitted kalamata olives
- ½ tsp dried oregano
- ¼ tsp salt
Instructions
- Sprinkle pork with pepper. Heat oil in a skillet over medium-high heat, swirling to coat. Brown pork 1 to 2 minutes per side; remove from skillet, and keep warm.
- Add mushrooms to pan. Cook 8 minutes or until browned and tender, stirring frequently.
- Add garlic, tomatoes, olives, oregano, and browned pork. Cook 15 minutes or until sauce is thickened; stir in salt.
Side Dish Ingredients
- 2 oz yolk-free egg noodles
- ½ lb green beans, trimmed
- 1 Tbsp extra virgin olive oil
- 1 tsp dried basil
- ⅛ tsp salt
Side Dish Instructions
- Cook noodles according to package directions.
- Arrange green beans in a steamer basket over boiling water. Cover and steam 6 minutes or until crisp-tender. Toss hot beans with oil, basil and salt.
- Serve noodles and beans alongside pork.
