Ingredients

  • 1¼ lb ground beef
  • ¾ cup panko breadcrumbs
  • ¼ cup finely chopped onion
  • ½ cup grated Parmesan cheese, divided
  • 1 large egg, lightly beaten
  • 2 tsp Italian seasoning
  • 1 (24-oz) can garlic and herb pasta sauce
  • 6 sub rolls, split and toasted
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Stir together beef, panko, onion, ¼ cup Parmesan, egg, and Italian seasoning. Season lightly with salt and pepper. Shape mixture into 24 meatballs.
  2. Place meatballs on a wire rack on a rimmed baking sheet; bake 20 minutes.
  3. Combine meatballs and pasta sauce in a large skillet; cook over medium heat until sauce is thoroughly heated.
  4. Sprinkle mozzarella over sub rolls; top with meatballs and sauce. Sprinkle with ¼ cup Parmesan.

Side Dish Ingredients

  • 2 apples, thinly sliced
  • 3 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • 1 (8-oz) pkg baby kale
  • ¼ cup olive oil

Side Dish Instructions

  1. Toss apples with lemon juice and honey in a large bowl; add kale. Drizzle with oil; season with salt and pepper to taste. Toss.
