Fork-Required Meatball Subs

Ingredients
- 1¼ lb ground beef
- ¾ cup panko breadcrumbs
- ¼ cup finely chopped onion
- ½ cup grated Parmesan cheese, divided
- 1 large egg, lightly beaten
- 2 tsp Italian seasoning
- 1 (24-oz) can garlic and herb pasta sauce
- 6 sub rolls, split and toasted
- 1 (8-oz) pkg shredded mozzarella cheese
Instructions
- Preheat oven to 400°F. Stir together beef, panko, onion, ¼ cup Parmesan, egg, and Italian seasoning. Season lightly with salt and pepper. Shape mixture into 24 meatballs.
- Place meatballs on a wire rack on a rimmed baking sheet; bake 20 minutes.
- Combine meatballs and pasta sauce in a large skillet; cook over medium heat until sauce is thoroughly heated.
- Sprinkle mozzarella over sub rolls; top with meatballs and sauce. Sprinkle with ¼ cup Parmesan.

- 2 apples, thinly sliced
- 3 Tbsp fresh lemon juice
- 1 Tbsp honey
- 1 (8-oz) pkg baby kale
- ¼ cup olive oil
Side Dish Instructions
- Toss apples with lemon juice and honey in a large bowl; add kale. Drizzle with oil; season with salt and pepper to taste. Toss.
