Italian Beef and Bacon Salad
Parmesan Toasts
Ingredients
- 1 (12-oz) pkg nitrate-free bacon, chopped
- Reserved 2½ cups cooked ground beef (from Italian Beef Pasta Bake recipe)
- 2 (12-oz) pkg chopped organic romaine lettuce
- 2 avocados, pitted and chopped
- ½ pint organic grape tomatoes, halved (or use 3 Roma tomatoes, chopped)
- ½ cup freshly grated Parmesan cheese
- 1 (1-oz) pkg fresh basil, finely chopped
- 1 (8-oz) bottle organic red wine and olive oil vinaigrette
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
- Microwave beef until thoroughly heated.
- Combine lettuce, ground beef, bacon, avocado, tomato, cheese, and basil; toss. Top with desired amount of dressing; toss.
Side Dish Ingredients
- ½ (12-oz) baguette (preferably whole wheat)
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 400°F. Cut baguette into ½-inch-thick slices. Place on a baking sheet, and sprinkle with cheese.
- Bake 10 minutes or until bread is toasted and cheese is melted.
