Italian Beef and Bacon Salad

Ingredients

  • 1 (12-oz) pkg nitrate-free bacon, chopped
  • Reserved 2½ cups cooked ground beef (from Italian Beef Pasta Bake recipe)
  • 2 (12-oz) pkg chopped organic romaine lettuce
  • 2 avocados, pitted and chopped
  • ½ pint organic grape tomatoes, halved (or use 3 Roma tomatoes, chopped)
  • ½ cup freshly grated Parmesan cheese
  • 1 (1-oz) pkg fresh basil, finely chopped
  • 1 (8-oz) bottle organic red wine and olive oil vinaigrette

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Microwave beef until thoroughly heated.
  3. Combine lettuce, ground beef, bacon, avocado, tomato, cheese, and basil; toss. Top with desired amount of dressing; toss.

Side Dish Ingredients

  • ½ (12-oz) baguette (preferably whole wheat)
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 400°F. Cut baguette into ½-inch-thick slices. Place on a baking sheet, and sprinkle with cheese.
  2. Bake 10 minutes or until bread is toasted and cheese is melted.
