Garlic and Thyme Roasted Pork Tenderloin
Spicy Roasted Okra and Quick Baked Sweet Potatoes
Ingredients
- 1½ lb pork tenderloin
- 1½ Tbsp canola oil
- 1½ tsp dried thyme
- 1½ tsp garlic powder
- ¾ tsp pepper
- ½ tsp salt
Instructions
- Preheat oven to 450°F. Brush pork with oil; sprinkle with thyme, garlic powder, pepper and salt.
- Place on a foil-lined baking sheet and cook, uncovered, 18 to 20 minutes or until internal temperature reaches 145°F or desired degree of doneness, turning occasionally.
- Let stand 10 minutes before slicing.
Side Dish Ingredients
- 1½ lb okra
- 1½ Tbsp canola oil
- ¾ tsp salt
- ¼ tsp cayenne pepper or to taste
- 6 (6-oz) sweet potatoes
- 3 Tbsp light butter with canola oil
Side Dish Instructions
- Preheat oven to 450°F. Toss okra with oil on a large baking sheet; spread in a single layer. Bake 8 to 10 minutes or until browned and tender. Sprinkle with salt and cayenne; toss well.
- Meanwhile, pierce potatoes with a fork, and wrap individually in damp paper towels. Microwave on HIGH 10 to 12 minutes or until tender when pierced with a fork.
- Split potatoes, and top evenly with light butter.
- Serve okra and potatoes alongside pork.
