Garlic and Thyme Roasted Pork Tenderloin

Spicy Roasted Okra and Quick Baked Sweet Potatoes

Ingredients

  • 1½ lb pork tenderloin
  • 1½ Tbsp canola oil
  • 1½ tsp dried thyme
  • 1½ tsp garlic powder
  • ¾ tsp pepper
  • ½ tsp salt

Instructions

  1. Preheat oven to 450°F. Brush pork with oil; sprinkle with thyme, garlic powder, pepper and salt.
  2. Place on a foil-lined baking sheet and cook, uncovered, 18 to 20 minutes or until internal temperature reaches 145°F or desired degree of doneness, turning occasionally.
  3. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • 1½ lb okra
  • 1½ Tbsp canola oil
  • ¾ tsp salt
  • ¼ tsp cayenne pepper or to taste
  • 6 (6-oz) sweet potatoes
  • 3 Tbsp light butter with canola oil

Side Dish Instructions

  1. Preheat oven to 450°F. Toss okra with oil on a large baking sheet; spread in a single layer. Bake 8 to 10 minutes or until browned and tender. Sprinkle with salt and cayenne; toss well.
  2. Meanwhile, pierce potatoes with a fork, and wrap individually in damp paper towels. Microwave on HIGH 10 to 12 minutes or until tender when pierced with a fork.
  3. Split potatoes, and top evenly with light butter.
  4. Serve okra and potatoes alongside pork.
