Ground Turkey, Asparagus and Basil Stir-Fry

Ingredients

  • ½ lb ground turkey
  • 1 (9-oz) pkg frozen cut asparagus, thawed
  • ½ (10-oz) pkg shredded carrots
  • 2 green onions, thinly sliced
  • 1 clove garlic, minced
  • 1½ Tbsp low-sodium soy sauce
  • 1½ Tbsp Thai sweet chili sauce
  • 3 Tbsp thinly sliced fresh basil

Instructions

  1. Cook ground turkey in a skillet over medium heat, stirring until turkey is browned and crumbly.
  2. Stir in asparagus, carrots, green onions and garlic; cook, stirring, 2 minutes.
  3. Stir in soy sauce and chili sauce; cook 2 minutes.
  4. Stir in basil.

  • ⅓ cup quinoa
  • 2 tsp light butter with canola oil
  • ¼ tsp grated orange zest

Side Dish Instructions

  1. Prepare quinoa according to package directions; toss with remaining ingredients.
