Grilled Ham and Swiss Sandwiches
Pineapple Coleslaw
Ingredients
- 1½ Tbsp reduced-fat mayonnaise
- 1 tsp whole-grain Dijon mustard
- ¼ tsp dried thyme
- 4 slices rye bread
- 2 ultra-thin slices Baby Swiss cheese
- 2 oz thinly sliced low-sodium honey roasted ham
- ¼ cup very thinly sliced red onion
- ½ red bell pepper, thinly sliced
Instructions
- Stir together mayonnaise, mustard and thyme; spread mixture evenly over bread slices.
- Place 1 slice cheese over mayonnaise mixture on each of 2 bread slices, and top evenly with ham, onion and bell pepper.
- Cover with remaining bread slices, mayonnaise side down.
- Heat a large nonstick skillet over medium heat. Lightly coat outsides of sandwiches with cooking spray.
- Add sandwiches to pan; cook 2 to 3 minutes on each side or until golden brown.

- 2 cups tricolor coleslaw
- 1 cup chopped pineapple
- 1½ Tbsp reduced-fat mayonnaise
- 2 tsp sugar
- 2 tsp fresh lemon juice

- Combine all ingredients.
