Spicy Southwest Chicken Salad

Ingredients

  • 2 bone-in, skinless chicken breasts
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ⅓ cup mayonnaise
  • ¼ tsp garlic salt
  • 1 tsp chipotle chile pepper
  • 1 Tbsp fresh lime juice
  • 1 stalk celery, thinly sliced
  • ½ red bell pepper, minced
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 375°F. Place chicken breasts in a baking dish; drizzle with oil, and sprinkle with salt and pepper. Bake 28 to 30 minutes or until chicken is done; cool. Chop chicken.
  2. Combine mayonnaise, garlic salt, chipotle pepper, lime juice, and salt and pepper to taste.
  3. Add chicken, celery, bell pepper, and green onions; stir well. Chill until ready to serve.
