Moo Shu Chicken Lettuce Wraps

Ingredients

  • 2 (8-oz) pkg sliced mushrooms
  • 1 Tbsp minced garlic
  • 1 Tbsp ginger paste
  • 2 Tbsp sesame oil
  • 1 (16-oz) pkg tricolor coleslaw
  • 3 cups shredded rotisserie chicken
  • ½ cup gluten-free hoisin sauce, divided (such as Kikkoman) 
  • ¼ tsp salt
  • 2 heads Bibb lettuce, leaves separated

Instructions

  1. Cook mushrooms, garlic, and ginger paste in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Stir in slaw, chicken, 2 Tbsp hoisin sauce, and salt; cook 2 to 3 minutes or until slaw is crisp-tender.
  2. Arrange lettuce in 12 stacks; top with chicken mixture. Wrap lettuce around filling, and serve wraps with 6 Tbsp hoisin sauce.

Side Dish Ingredients

  • 2 (8.5-oz) pouches gluten-free microwavable jasmine rice (such as Tasty Bite)
  • 1 Tbsp toasted sesame seeds
  • 2 Tbsp gluten-free soy sauce

Side Dish Instructions

  1. Heat rice according to package directions. Stir in sesame seeds and soy sauce.
