Chicken, Tomato, and Cucumber Salad

Ingredients

  • 2 boneless, skinless chicken breasts, cut in half lengthwise
  • 1 tsp Greek seasoning
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp red wine vinegar
  • ⅛ tsp garlic salt
  • ⅛ tsp pepper
  • ½ (5-oz) pkg arugula-spinach mix
  • 1 cup grape tomatoes, halved
  • ½ English cucumber, thinly sliced
  • 2 Tbsp halved pitted kalamata olives

Instructions

  1. Preheat grill pan to medium-high heat. Coat pan with cooking spray.
  2. Sprinkle chicken with seasoning. Cook chicken 3 minutes per side or until done; slice chicken.
  3. Whisk together oil, vinegar, garlic salt, and pepper in a bowl. Add arugula, tomatoes, cucumber, and olives; toss. Top with chicken.
