Chicken, Tomato, and Cucumber Salad
Ingredients
- 2 boneless, skinless chicken breasts, cut in half lengthwise
- 1 tsp Greek seasoning
- 2 Tbsp extra virgin olive oil
- 1 Tbsp red wine vinegar
- ⅛ tsp garlic salt
- ⅛ tsp pepper
- ½ (5-oz) pkg arugula-spinach mix
- 1 cup grape tomatoes, halved
- ½ English cucumber, thinly sliced
- 2 Tbsp halved pitted kalamata olives
Instructions
- Preheat grill pan to medium-high heat. Coat pan with cooking spray.
- Sprinkle chicken with seasoning. Cook chicken 3 minutes per side or until done; slice chicken.
- Whisk together oil, vinegar, garlic salt, and pepper in a bowl. Add arugula, tomatoes, cucumber, and olives; toss. Top with chicken.
