Hunter-Style Chicken Drumsticks
Fresh Greens with ParmesanIngredients
- 2 slices bacon
- 6 bone-in, skin-on chicken drumsticks (skin removed, if desired)
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ½ (8-oz) pkg sliced baby portobello mushrooms
- 2 cloves garlic, minced
- ¼ cup white wine (or use chicken broth)
- ¼ tsp dried crushed rosemary
- 1 (15-oz) can crushed tomatoes
Instructions
- Cook bacon in a Dutch oven over medium heat until crisp; drain, reserving drippings in pot. Crumble bacon.
- Sprinkle chicken with salt and pepper. Cook in hot drippings 3 minutes per side or until browned. Remove and keep warm.
- Add oil to drippings in pot; cook mushrooms and garlic in hot oil 8 minutes or until tender. Add wine, rosemary, and tomatoes, scraping pot with to loosen browned bits.
- Add bacon and chicken. Cover and simmer 15 minutes or until chicken is done.
Side Dish Ingredients
- 1 (5-oz) pkg mixed greens
- 3 Tbsp balsamic vinaigrette
- ¼ cup shredded Parmesan cheese
Side Dish Instructions
- Toss together all ingredients in a bowl.
