Chicken and Sausage Jambalaya
Parsley Cauli-RiceIngredients
- ¾ lb boneless, skinless chicken breasts, cut into 2-inch pieces
- ½ (14-oz) pkg smoked kielbasa sausage, cut into ½-inch slices
- 1 (14.5-oz) can no-salt-added diced tomatoes
- ½ cup diced onion
- ½ cup diced red bell pepper
- 1 stalk celery, diced
- ½ cup chicken broth
- 2 cloves garlic, minced
- 1 tsp salt-free Cajun seasoning
- 1 bay leaf
Instructions
- Combine all ingredients in a 3- to 4-quart slow cooker.
- Cover and cook on LOW 6 to 7 hours. Discard bay leaf. Serve over Parsley-Cauli Rice recipe.
Side Dish Ingredients
- 1 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
- 2 tsp olive oil
- 1 Tbsp chopped fresh flat-leaf parsley
- ⅛ tsp salt
Side Dish Instructions
- Cook cauliflower according to package directions. Stir in oil, parsley, and salt. Season with pepper to taste.
