Chicken and Sausage Jambalaya

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into 2-inch pieces
  • ½ (14-oz) pkg smoked kielbasa sausage, cut into ½-inch slices
  • 1 (14.5-oz) can no-salt-added diced tomatoes
  • ½ cup diced onion
  • ½ cup diced red bell pepper
  • 1 stalk celery, diced
  • ½ cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp salt-free Cajun seasoning
  • 1 bay leaf

Instructions

  1. Combine all ingredients in a 3- to 4-quart slow cooker.
  2. Cover and cook on LOW 6 to 7 hours. Discard bay leaf. Serve over Parsley-Cauli Rice recipe.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
  • 2 tsp olive oil
  • 1 Tbsp chopped fresh flat-leaf parsley
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook cauliflower according to package directions. Stir in oil, parsley, and salt. Season with pepper to taste.
