Spanish-Style Salmon
Broccoli with Manchego and AlmondsIngredients
- 1½ lb salmon fillets
- 1 Tbsp paprika (or use smoked paprika, if on hand)
- ½ tsp salt
- ¼ tsp pepper
- 2 Tbsp butter
- 2 Tbsp olive oil
- 2 pints grape tomatoes
Instructions
- Preheat oven to 350°F. Rub fish with paprika; sprinkle with salt and pepper.
- Melt butter with oil in a large cast-iron or ovenproof skillet over medium-high heat; add fish. Cook 3 to 4 minutes per side, basting with pan juices; add tomatoes to skillet.
- Transfer pan to oven. Bake 5 to 7 minutes or until fish flakes with a fork.

- 2 (12-oz) pkg broccoli florets
- 3 Tbsp olive oil
- 1 tsp kosher salt
- ¼ tsp pepper
- ¾ cup sliced almonds, toasted
- ⅓ cup grated Manchego cheese (or use Parmesan)
Side Dish Instructions
- Cook broccoli according to package directions. Toss with oil, salt, and pepper. Sprinkle with nuts and cheese.
