Spanish-Style Salmon

Ingredients

  • 1½ lb salmon fillets
  • 1 Tbsp paprika (or use smoked paprika, if on hand)
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 2 pints grape tomatoes

Instructions

  1. Preheat oven to 350°F. Rub fish with paprika; sprinkle with salt and pepper.
  2. Melt butter with oil in a large cast-iron or ovenproof skillet over medium-high heat; add fish. Cook 3 to 4 minutes per side, basting with pan juices; add tomatoes to skillet.
  3. Transfer pan to oven. Bake 5 to 7 minutes or until fish flakes with a fork.

  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp olive oil
  • 1 tsp kosher salt
  • ¼ tsp pepper
  • ¾ cup sliced almonds, toasted
  • ⅓ cup grated Manchego cheese (or use Parmesan)

Side Dish Instructions

  1. Cook broccoli according to package directions. Toss with oil, salt, and pepper. Sprinkle with nuts and cheese.
