One-Pot Taco Chili Mac

Ingredients

  • ½ lb lean ground beef
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1 (14.5-oz) can BPA-free organic diced tomatoes with green chiles
  • 1 (14.5-oz) can low-sodium beef broth
  • ½ cup water
  • ¼ tsp salt
  • ¼ (16-oz) pkg whole-grain elbow macaroni
  • 1 cup shredded sharp Cheddar cheese
  • ¼ cup chopped fresh cilantro
  • 1 green onion, chopped

Instructions

  1. Cook beef, onion, and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in chili powder, tomatoes, broth, water, and salt. Bring to a boil; add macaroni. Cook 10 minutes, stirring occasionally, or until macaroni is tender. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with cilantro and onion.

Side Dish Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 organic Roma tomato, chopped
  • 1 carrot, shredded
  • ¼ cup organic avocado-Ranch dressing (such as Tessemae's)

Side Dish Instructions

  1. Combine lettuce, tomato, and carrot in a large bowl; drizzle with dressing, and toss.
