Orzo Chicken Soup
Easy Kale Caesar
Ingredients
- 3 large carrots, sliced
- 3 cloves garlic, minced
- 2 stalks celery, thinly sliced
- 1 onion, chopped
- 1 Tbsp olive oil
- 2 (32-oz) cartons low-sodium chicken broth
- 2 tsp dried oregano
- 1 cup orzo
- 1 rotisserie chicken, skinned and shredded
- ⅓ cup fresh lemon juice
- ¼ cup chopped fresh parsley
- 3 Tbsp pesto
Instructions
- Sauté carrots, garlic, celery, and onion in hot oil in a pot over medium-high heat 5 minutes.
- Add broth and oregano; bring to a boil. Add orzo; cook, stirring often, 6 to 8 minutes or until tender. Add chicken; cook 5 minutes.
- Remove from heat; stir in lemon juice. Season with salt and pepper to taste.
- Sprinkle with parsley; top each serving with 1½ tsp pesto.
Side Dish Ingredients
- 1 (5-oz) pkg baby kale
- ½ cup chopped fresh mint (optional)
- ½ cup thinly sliced red onion
- ⅓ cup Caesar dressing
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Toss kale, mint (if using), and onion with dressing.
- Season with salt and pepper to taste. Sprinkle with cheese; toss.
