Instant Pot Fresh Tomato Sauce over Pasta

Ingredients

  • 4½ lb tomatoes, coarsely chopped
  • 1½ cups chopped onion
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 10 fresh thyme sprigs
  • 1½ tsp salt
  • 1 tsp pepper
  • 2 bay leaves
  • ½ tsp crushed red pepper
  • 2 Tbsp fresh lemon juice
  • ½ cup chopped fresh basil
  • 1 (16-oz) pkg ziti pasta

Instructions

  1. Combine all ingredients except lemon juice, basil, and pasta in a 6-quart Instant Pot. Close and lock pot lid. Turn steam release to sealing position. Set cook time on Manual for 15 minutes.
  2. When timer sounds, turn pot off, and release steam using Quick Release method. Change pot to Sauté setting; select More.
  3. Bring to a boil. Boil sauce, stirring occasionally, 15 minutes. Discard bay leaves. Puree sauce using an immersion blender (see Note). Stir in lemon juice and basil.
  4. Meanwhile, cook pasta according to package directions. Serve sauce over pasta. Sprinkle with additional basil, if desired.
