Burritos Gordo
Tortilla Chips and SalsaIngredients
- 1½ lb ground beef
- 1 (15-oz) can black beans, drained and rinsed
- 1 Tbsp ground cumin
- 1 (8-count) pkg burrito-size flour tortillas
- 1 (8-oz) pkg shredded Mexican-blend cheese
- 1 (8-oz) container guacamole
- 1 (8-oz) carton sour cream
- 1 (15-oz) container white cheese dip
- ½ head iceberg lettuce, shredded
- 2 Roma tomatoes, chopped
Instructions
- Preheat oven to 400°F. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Stir in beans and cumin; cook, stirring, 2 minutes or until thoroughly heated. Season with salt and pepper to taste.
- Spoon beef mixture down center of tortillas; top with cheese, guacamole, and sour cream. Roll up tortillas and place, seam sides down, in a lightly greased 13- x 9-inch baking dish. Spoon cheese dip over tortillas.
- Bake 25 minutes or until hot and bubbly. Top with lettuce and tomatoes.
