Sweet Italian Sausages with Peppers and Onions
Roasted Yukon Gold Potatoes
Ingredients
- 1 (19.5-oz) pkg lean sweet Italian turkey sausage links
- 2 Tbsp olive oil
- 2 (14-oz) pkg frozen stir-fry vegetables, thawed (such as Birds Eye)
- 2 cloves garlic, minced
- 1 (14.5-oz) can diced tomatoes
- 1 tsp Italian seasoning
- ½ tsp pepper
- ¼ tsp salt
Instructions
- Cook sausage in hot oil in a large skillet over medium heat 6 minutes or until browned, turning occasionally; remove and keep warm.
- Add vegetables and garlic to skillet; sauté 5 minutes or until tender. Stir in tomatoes, seasoning, pepper, and salt; return sausages to skillet. Cover and simmer 8 to 10 minutes or until sausages are done.
Side Dish Ingredients
- 2 lb Yukon Gold potatoes, cut into 1-inch wedges
- 3 Tbsp olive oil
- 1 Tbsp garlic powder
Side Dish Instructions
- Preheat oven to 425°F. Toss together potatoes, oil, garlic powder, and desired amount of salt and pepper on a greased rimmed baking sheet. Spread potatoes in a single layer.
- Bake 20 to 25 minutes or until potatoes are browned and tender, stirring occasionally.
