Barbecue Meatloaf

Oven-Baked Dijon Potatoes and Green Beans

Ingredients

  • ⅓ cup chopped onion
  • 1 tsp canola oil
  • ½ lb lean ground beef
  • ¼ cup barbecue sauce
  • ¼ cup quick-cooking oats
  • ½ tsp dried oregano
  • ⅛ tsp crushed red pepper
  • 1 large egg, lightly beaten

Instructions

  1. Preheat oven to 375°F. Sauté onion in hot oil 3 minutes or until slightly browned; remove from heat.
  2. Combine beef, onion, 2 Tbsp barbecue sauce, oats, oregano, red pepper and egg; mix with hands until blended. Shape into a 1-inch-tall loaf on a baking sheet coated with cooking spray.
  3. Bake 35 minutes or until a meat thermometer inserted into center of loaf reads 165°F. Top with remaining barbecue sauce, and let stand 10 minutes.
  4. Slice before serving.

Side Dish Ingredients

  • ½ lb russet potatoes, cut into chunks
  • 2 tsp Dijon mustard
  • 2 tsp canola oil
  • ½ lb green beans, ends trimmed
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 375°F. Toss together potatoes, mustard, and oil in a bowl. Spread into a single layer on a rimmed baking sheet. Bake 15 minutes.
  2. Coat green beans with cooking spray. Add green beans, garlic powder, salt and pepper to potatoes, and toss. Spread into a single layer.
  3. Bake 15 minutes longer.
