Blackened Mahi Mahi

Creamy Broccoli Slaw and Corn on the Cob

Ingredients

  • ¾ lb mahi mahi fillets
  • 1 Tbsp blackened seasoning
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • ½ lemon, cut into 2 wedges

Instructions

  1. Coat fish with blackened seasoning; chill 30 minutes.
  2. Heat oil and butter in a large nonstick skillet over medium heat; add fillets. Cook 2 to 3 minutes per side or until fish flakes with a fork. Serve with lemon wedges.

  • ⅓ cup olive-oil mayonnaise
  • 1 Tbsp yellow mustard
  • 1½ Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 Tbsp chopped fresh basil
  • ¼ tsp pepper
  • ⅛ tsp salt
  • 1 (12-oz) pkg broccoli slaw
  • 2 frozen ears corn

Side Dish Instructions

  1. Whisk together mayonnaise, mustard, vinegar, honey, basil, pepper, and salt in a large bowl. Add slaw; toss. Chill until ready to serve.
  2. Cook corn in boiling salted water to cover 10 minutes or until tender; drain.
