Barbecue Chicken Grilled Cheese Sandwiches

Ingredients

  • ¼ cup barbecue sauce
  • 2 Tbsp mayonnaise
  • ½ Tbsp Dijon mustard
  • ½ tsp honey
  • 4 slices Texas toast
  • 4 slices mozzarella cheese
  • 1 tomato, sliced
  • ⅓ cup dill pickle chips
  • 1 (8-oz) pkg refrigerated grilled and ready chicken breast strips
  • 2 Tbsp butter, softened

Instructions

  1. Preheat oven to 425°F. Stir together barbecue sauce, mayonnaise, mustard, and honey. Spread mixture over 1 side of each toast. Top 4 toast slices with 1 slice cheese, tomato, pickles, chicken, and 1 slice cheese. Cover with remaining toast, sauce side down.
  2. Spread butter on outsides of sandwiches; place sandwiches on a baking sheet. Bake 20 minutes or until bread is toasted and cheese is melted.

Side Dish Ingredients

  • ½ (12-oz) pkg mixed greens
  • 1 apple, cored and chopped
  • ¼ cup Ranch dressing

Side Dish Instructions

  1. Toss together all ingredients just before serving.
