Barbecue Chicken Grilled Cheese Sandwiches
Mixed Greens and Apple Salad
Ingredients
- ¼ cup barbecue sauce
- 2 Tbsp mayonnaise
- ½ Tbsp Dijon mustard
- ½ tsp honey
- 4 slices Texas toast
- 4 slices mozzarella cheese
- 1 tomato, sliced
- ⅓ cup dill pickle chips
- 1 (8-oz) pkg refrigerated grilled and ready chicken breast strips
- 2 Tbsp butter, softened
Instructions
- Preheat oven to 425°F. Stir together barbecue sauce, mayonnaise, mustard, and honey. Spread mixture over 1 side of each toast. Top 4 toast slices with 1 slice cheese, tomato, pickles, chicken, and 1 slice cheese. Cover with remaining toast, sauce side down.
- Spread butter on outsides of sandwiches; place sandwiches on a baking sheet. Bake 20 minutes or until bread is toasted and cheese is melted.

- ½ (12-oz) pkg mixed greens
- 1 apple, cored and chopped
- ¼ cup Ranch dressing

- Toss together all ingredients just before serving.
