Tortellini with Sausage, Spinach and Mushrooms

Ingredients

  •  2 (9-oz) pkg three-cheese tortellini
  • 1 (16-oz) pkg smoked sausage, sliced
  • 2 tsp minced garlic
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 1 (5-oz) pkg baby spinach
  • ¼ cup white wine
  • ½ cup chopped walnuts
  • ½ cup shredded Parmesan cheese

Instructions

  1. Cook tortellini according to package directions; drain over a small bowl, reserving ½ cup cooking water.
  2. Meanwhile, cook sausage, garlic and mushrooms in a large nonstick skillet over medium heat until sausage is browned.
  3. Add spinach and wine; cook 2 minutes or until spinach wilts.
  4. Add tortellini and reserved ½ cup cooking water to pan; toss. Sprinkle with walnuts and cheese .
