Flank Steak "Naanwiches"

Ingredients

  • 1½ lb flank steak
  • 1 Tbsp olive oil
  • 1 Tbsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ (7.05-oz) pkg mini naan
  • ¼ cup chopped fresh parsley
  • 1 (3.5-oz) pkg crumbled feta cheese
  • Apple-Red Cabbage Salad (recipe follows)

Instructions

  1. Preheat oven to 400°F. Rub flank steak with oil, chili powder, salt and pepper.
  2. Heat a grill pan or cast-iron skillet over medium-high heat; cook steak 6 to 7 minutes per side or to desired doneness.
  3. Remove to a cutting board; let rest 5 minutes before slicing against the grain.
  4. Meanwhile, place naan on a baking sheet. Bake 10 minutes or until browned and crisp.
  5. Divide steak between naan; top with Apple-Red Cabbage Salad, parsley and feta cheese.
