Smothered Chicken

Roasted Garlic Red Potatoes and Steamed Broccoli

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 2 Tbsp butter, divided
  • 1 Tbsp honey mustard
  • ½ (8-oz) pkg sliced mushrooms
  • ½ cup shredded Cheddar cheese
  • ½ (2.5-oz) pkg real bacon pieces

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper.
  2. Melt 1 Tbsp butter in a nonstick skillet over medium-high heat. Add chicken, and cook 6 minutes per side or until done. Remove from skillet; brush with honey mustard.
  3. Melt 1 Tbsp butter in same skillet over medium-high heat. Add mushrooms, and cook until browned and tender. Remove from skillet. Return chicken to skillet; top with mushrooms and cheese. Cover and cook 2 minutes or until cheese is melted. Sprinkle with bacon.

  • ½ (22-oz) pkg frozen roasted garlic red potatoes
  • ½ (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Prepare potatoes according to package directions.
  2. Steam broccoli according to package directions; season with salt and pepper to taste.
