Pepperoni Pizza Soup

- 1 (16-oz) pkg ground mild Italian pork sausage (or use ¾ lb ground beef)
- 1 (6-oz) pkg sliced pepperoni, chopped
- ½ small onion, finely chopped
- 1 Tbsp minced garlic
- 1 (32-oz) carton chicken broth
- 1 (14.5-oz) can diced tomatoes
- 1 (15-oz) can tomato sauce
- 1 (6-oz) can tomato paste
- 2 tsp Italian seasoning
- 1 cup (or more) shredded mozzarella cheese
Instructions
- Cook sausage, pepperoni, onion, and garlic in a Dutch oven 8 to 10 minutes or until sausage is browned and crumbly; drain well, and return to pot.
- Stir in broth, tomatoes, tomato sauce, tomato paste, and Italian seasoning. Bring to a boil; reduce heat, and simmer 20 minutes. Stir in cheese just before serving.
Side Dish Ingredients
- ⅓ cup butter, melted
- ½ tsp garlic salt
- 6 hot dog buns, split
- 1 cup shredded Parmesan cheese (or use mozzarella)
Side Dish Instructions
- Preheat oven to 450°F. Mix butter and garlic salt. Brush cut sides of buns with butter mixture; place on a baking sheet. Sprinkle with cheese.
- Bake 6 to 8 minutes or until golden and toasted.
