Pepperoni Pizza Soup

Ingredients

  • 1 (16-oz) pkg ground mild Italian pork sausage (or use ¾ lb ground beef)
  • 1 (6-oz) pkg sliced pepperoni, chopped
  • ½ small onion, finely chopped
  • 1 Tbsp minced garlic
  • 1 (32-oz) carton chicken broth
  • 1 (14.5-oz) can diced tomatoes
  • 1 (15-oz) can tomato sauce
  • 1 (6-oz) can tomato paste
  • 2 tsp Italian seasoning
  • 1 cup (or more) shredded mozzarella cheese

Instructions

  1. Cook sausage, pepperoni, onion, and garlic in a Dutch oven 8 to 10 minutes or until sausage is browned and crumbly; drain well, and return to pot.
  2. Stir in broth, tomatoes, tomato sauce, tomato paste, and Italian seasoning. Bring to a boil; reduce heat, and simmer 20 minutes. Stir in cheese just before serving.

Side Dish Ingredients

  • ⅓ cup butter, melted
  • ½ tsp garlic salt
  • 6 hot dog buns, split
  • 1 cup shredded Parmesan cheese (or use mozzarella)

Side Dish Instructions

  1. Preheat oven to 450°F. Mix butter and garlic salt. Brush cut sides of buns with butter mixture; place on a baking sheet. Sprinkle with cheese.
  2. Bake 6 to 8 minutes or until golden and toasted.
