Skillet Mojo Shrimp
Cilantro-Lime Rice and Black BeansIngredients
- 3 cloves garlic, minced
- ⅓ cup olive oil
- ⅓ cup orange juice
- ⅓ cup fresh lime juice
- 2 tsp ground cumin
- 1 tsp dried oregano
- 2 lb peeled and deveined, large raw shrimp
- ¼ cup chopped fresh cilantro
Instructions
- Whisk together garlic, oil, orange juice, lime juice, cumin, and oregano in a large bowl. Reserve ½ cup mixture in a small bowl.
- Add shrimp to large bowl of marinade; toss and let stand 10 minutes.
- Drain shrimp, discarding marinade. Cook shrimp in a large nonstick skillet over medium-high heat 2 minutes, stirring occasionally, until shrimp just begin to turn pink.
- Add reserved ½ cup marinade to skillet; cook 1 minute. Remove from heat, and sprinkle with cilantro; serve over rice.

- 1½ cups long-grain white rice
- 1 (15.25-oz) can black beans
- 2 tsp ground cumin
- 1 tsp lime zest
- 1 Tbsp fresh lime juice
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, cook beans and cumin in a saucepan over medium-low heat, stirring occasionally, 15 minutes.
- Stir lime zest, juice, and cilantro into rice.
