Cilantro-Lime Rice and Black Beans

Ingredients

  • 3 cloves garlic, minced
  • ⅓ cup olive oil
  • ⅓ cup orange juice
  • ⅓ cup fresh lime juice
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 lb peeled and deveined, large raw shrimp
  • ¼ cup chopped fresh cilantro

Instructions

  1. Whisk together garlic, oil, orange juice, lime juice, cumin, and oregano in a large bowl. Reserve ½ cup mixture in a small bowl.
  2. Add shrimp to large bowl of marinade; toss and let stand 10 minutes.
  3. Drain shrimp, discarding marinade. Cook shrimp in a large nonstick skillet over medium-high heat 2 minutes, stirring occasionally, until shrimp just begin to turn pink.
  4. Add reserved ½ cup marinade to skillet; cook 1 minute. Remove from heat, and sprinkle with cilantro; serve over rice.

  • 1½ cups long-grain white rice
  • 1 (15.25-oz) can black beans
  • 2 tsp ground cumin
  • 1 tsp lime zest
  • 1 Tbsp fresh lime juice
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook beans and cumin in a saucepan over medium-low heat, stirring occasionally, 15 minutes.
  3. Stir lime zest, juice, and cilantro into rice.
