Creamy Chicken Divan

Ingredients

  • ¼ cup butter
  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • ¼ cup all-purpose flour
  • 1 (14.5-oz) can chicken broth
  • ⅓ cup white wine
  • ½ cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 2 (12-oz) pkg frozen broccoli florets

Instructions

  1. Melt butter in a large nonstick skillet over medium heat; add chicken, and cook 6 minutes or until done. Add flour; cook, stirring constantly, 2 minutes.
  2. Stir in broth and wine; cook, stirring occasionally, 5 minutes or until thickened. Reduce heat to low; stir in sour cream and cheese.
  3. Microwave broccoli according to package directions; drain and add to skillet. Cook, stirring, 3 minutes. Season with salt and pepper to taste. Serve over Lemon Rice Pilaf recipe.

  • 2 Tbsp butter
  • 2 cups long-grain white rice
  • 1 (32-oz) carton chicken broth
  • 1½ tsp lemon zest
  • 1 Tbsp fresh lemon juice

Side Dish Instructions

  1. Melt butter in a large saucepan over medium heat; add rice, and sauté 1 minute. Stir in broth, lemon zest, and juice.
  2. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
