Low-Carb Chicken and Spinach Casserole

Ingredients

  • ¼ cup and 3 Tbsp grated Parmesan cheese
  • ⅛ tsp Italian seasoning
  • 4 boneless, skinless chicken breast halves
  • 1¼ cloves garlic, crushed
  • 1 Tbsp and 1 tsp butter
  • 1 Tbsp and 1 tsp all-purpose flour
  • ⅔ cup heavy cream
  • Salt and ground black pepper to taste
  • 1¼ (10-oz) pk frozen chopped spinach, thawed and drained

Instructions

  1. Preheat the oven to 350°F.
  2. Mix Parmesan cheese and Italian seasoning together in a bowl. Coat chicken breasts in the mixture and arrange in an 8-inch square baking dish.
  3. Melt butter in a skillet over medium-high heat. Sauté garlic until tender, about 2 minutes. Whisk in flour to form a paste, about 3 minutes. Add cream; cook and stir until paste is thickened, about 7 minutes more. Season with salt and pepper. Add spinach; cook and stir until heated through, about 3 minutes.
  4. Pour spinach mixture over chicken breasts in the baking dish; top with any remaining Parmesan cheese mixture.
  5. Bake until chicken is no longer pink in the center and the juices run clear, 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 165°F.

Side Dish Ingredients

  • 2 large delicata squash, ends trimmed, halved lengthwise, seeded
  • 2 Tbsp olive oil
  • 2 tsp salt
  • Cayenne pepper to taste

Side Dish Instructions

  1. Place squash halves cut side down on a cutting board. Slice into ⅜-inch slices. Transfer slices to a bowl. Drizzle with olive oil; add salt and cayenne pepper. Toss to coat squash with oil.
  2. Preheat oven to 450 degrees F. Line a rimmed baking sheet with parchment paper or a silicone mat.
  3. Arrange squash pieces in a single layer on prepared baking sheet. Place in preheated oven until bottom of slices is browned and squash is tender, 12 to 18 minutes.
