Chicken Dijon

Herbed Rice and Steamed Green Beans

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ¼ cup all-purpose flour
  • 4 Tbsp butter
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • ¼ cup white wine
  • 3 Tbsp Dijon mustard

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Dredge in flour to coat.
  2. Melt butter in a large nonstick skillet over medium-high heat. Add chicken, and cook 5 to 6 minutes per side or until done. Remove from skillet, and keep warm.
  3. Add onions and garlic to skillet; cook 1 minute. Add cream, wine, and mustard; bring to a boil, reduce heat, and simmer 5 minutes. Spoon sauce over chicken.

Side Dish Ingredients

  • 2 cups long-grain white rice
  • 1 Tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Steam rice according to package directions; toss with oil, Italian seasoning, and salt and pepper to taste.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
