Chicken Dijon
Herbed Rice and Steamed Green Beans
Ingredients
- 2 lb boneless, skinless chicken breasts
- ¼ cup all-purpose flour
- 4 Tbsp butter
- 4 green onions, chopped
- 2 cloves garlic, minced
- ½ cup heavy cream
- ¼ cup white wine
- 3 Tbsp Dijon mustard
Instructions
- Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Dredge in flour to coat.
- Melt butter in a large nonstick skillet over medium-high heat. Add chicken, and cook 5 to 6 minutes per side or until done. Remove from skillet, and keep warm.
- Add onions and garlic to skillet; cook 1 minute. Add cream, wine, and mustard; bring to a boil, reduce heat, and simmer 5 minutes. Spoon sauce over chicken.

- 2 cups long-grain white rice
- 1 Tbsp olive oil
- 1 tsp Italian seasoning
- 1 (12-oz) pkg frozen green beans
Side Dish Instructions
- Steam rice according to package directions; toss with oil, Italian seasoning, and salt and pepper to taste.
- Steam green beans according to package directions; season with salt and pepper to taste.
