Easy Barbecue Chicken

Romaine Salad with Yogurt Dressing

Ingredients

  • 6 chicken leg quarters
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 2 lemons, halved crosswise
  • 1 (10-oz) bottle organic barbecue sauce (such as Tessemae's)

Instructions

  1. Rub chicken with oil, and sprinkle with salt and pepper.
  2. Preheat grill to medium-high heat; grill chicken 10 minutes per side, brushing with desired amount of barbecue sauce during last 5 minutes of grilling.
  3. Grill lemons, cut sides down, 2 to 3 minutes.
  4. Remove chicken and lemons from grill; squeeze lemon juice over chicken, and serve with remaining barbecue sauce.

Side Dish Ingredients

  • 2 cloves garlic
  • 3 Tbsp fresh lemon juice
  • 2 Tbsp olive oil
  • 1 (5.3-oz) carton plain Greek yogurt
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 head romaine lettuce, shredded
  • 1 cup grape tomatoes, halved

Side Dish Instructions

  1. Drop garlic cloves through food chute of a food processor while it is running; process until minced. Add lemon juice and oil.
  2. Process until smooth; add yogurt. Pulse until blended. Stir in salt and pepper.
  3. Toss salad with tomatoes and dressing.
