Easy Barbecue Chicken
Romaine Salad with Yogurt DressingIngredients
- 6 chicken leg quarters
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 lemons, halved crosswise
- 1 (10-oz) bottle organic barbecue sauce (such as Tessemae's)
Instructions
- Rub chicken with oil, and sprinkle with salt and pepper.
- Preheat grill to medium-high heat; grill chicken 10 minutes per side, brushing with desired amount of barbecue sauce during last 5 minutes of grilling.
- Grill lemons, cut sides down, 2 to 3 minutes.
- Remove chicken and lemons from grill; squeeze lemon juice over chicken, and serve with remaining barbecue sauce.
Side Dish Ingredients
- 2 cloves garlic
- 3 Tbsp fresh lemon juice
- 2 Tbsp olive oil
- 1 (5.3-oz) carton plain Greek yogurt
- ½ tsp salt
- ¼ tsp pepper
- 1 head romaine lettuce, shredded
- 1 cup grape tomatoes, halved
Side Dish Instructions
- Drop garlic cloves through food chute of a food processor while it is running; process until minced. Add lemon juice and oil.
- Process until smooth; add yogurt. Pulse until blended. Stir in salt and pepper.
- Toss salad with tomatoes and dressing.
