Weeknight Sloppy Joes
Broccoli Tots
Ingredients
- 1½ lb lean ground beef
- 1 cup chopped yellow onion
- 1 organic green bell pepper, chopped
- 1 Tbsp olive oil
- 1 (24-oz) jar natural marinara sauce (such as Rao's)
- 1 Tbsp unsulphured molasses
- 6 hamburger buns (preferably whole wheat)
Instructions
- Cook beef, onion, and bell pepper in hot oil in a large skillet over medium heat, stirring occasionally, 6 minutes or until beef is browned and vegetables are tender.
- Combine marinara sauce and molasses; stir into beef mixture. Cook 3 minutes or until bubbly. Serve meat mixture on buns.
Side Dish Ingredients
- 1 lb broccoli crown, cut into florets
- 1 cup shredded sharp Cheddar cheese
- ¼ cup finely chopped yellow onion
- ½ cup panko breadcrumbs (preferably whole wheat)
- 2 large eggs, lightly beaten
- ½ tsp pepper
- ¼ tsp salt
Side Dish Instructions
- Preheat oven to 400°F. Steam broccoli in a steamer basket over simmering water 5 minutes or until tender. Remove from basket, finely chop, and press with paper towels to remove excess liquid.
- Transfer to a medium bowl. Stir in cheese and remaining ingredients.
- Divide mixture among 24 greased mini muffin pans. Bake 20 minutes or until golden and firm.
