Blood Orange-Banana Smoothie

Ingredients

  • 6 blood oranges (or use navel oranges)
  • 2 (13.5-oz) cans unsweetened coconut milk
  • 3 bananas, sliced and frozen
  • 1 tsp pure vanilla extract
  • ¼ cup chia seeds

Instructions

  1. Grate 1 orange to equal 2 Tbsp zest; peel and section all oranges.
  2. Process orange sections, zest, coconut milk, bananas, and vanilla, in 2 batches if necessary, in a blender until smooth, scraping sides as needed. Add enough water to reach desired consistency.
  3. Stir in chia seeds.

Side Dish Ingredients

  • 1 cup raw whole almonds
  • ¼ cup raw honey

Side Dish Instructions

  1. Preheat broiler. Toss together nuts and honey; place on a baking sheet rubbed with coconut oil.
  2. Broil 3 minutes or until fragrant and lightly toasted, watching carefully to prevent burning.
