Blood Orange-Banana Smoothie
Honey-Roasted AlmondsIngredients
- 6 blood oranges (or use navel oranges)
- 2 (13.5-oz) cans unsweetened coconut milk
- 3 bananas, sliced and frozen
- 1 tsp pure vanilla extract
- ¼ cup chia seeds
Instructions
- Grate 1 orange to equal 2 Tbsp zest; peel and section all oranges.
- Process orange sections, zest, coconut milk, bananas, and vanilla, in 2 batches if necessary, in a blender until smooth, scraping sides as needed. Add enough water to reach desired consistency.
- Stir in chia seeds.
Side Dish Ingredients
- 1 cup raw whole almonds
- ¼ cup raw honey
Side Dish Instructions
- Preheat broiler. Toss together nuts and honey; place on a baking sheet rubbed with coconut oil.
- Broil 3 minutes or until fragrant and lightly toasted, watching carefully to prevent burning.
