Date-Nut "Cereal"

Ingredients

  • ½ cup raw almonds
  • ½ cup shelled raw pistachios
  • ½ cup unsweetened coconut chips
  • ½ cup chopped dried dates
  • 2 bananas, peeled and sliced
  • 1 (13.5-oz) can unsweetened coconut milk

Instructions

  1. Preheat oven to 350°F. Spread nuts and coconut on a rimmed baking sheet.
  2. Bake 5 to 10 minutes or until fragrant, stirring once halfway through baking.
  3. Combine nut mixture and dates. Divide mixture among 4 bowls; top with banana slices.
  4. Serve with desired amount of coconut milk.
