Tortellini with Sausage, Spinach and Mushrooms

Ingredients

  • 1 (9-oz) pkg refrigerated three-cheese tortellini
  • ½ (16-oz) pkg smoked sausage, sliced
  • 1 tsp minced garlic
  • ½ (8-oz) pkg whole mushrooms, sliced
  • 1 (5-oz) pkg baby spinach
  • ¼ cup white wine (or use broth)
  • ¼ cup chopped walnuts
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook tortellini according to package directions; drain over a small bowl, reserving ¼ cup cooking water.
  2. Meanwhile, cook sausage, garlic and mushrooms in a nonstick skillet over medium heat until sausage is browned.
  3. Add spinach and wine; cook 2 minutes or until spinach wilts.
  4. Add tortellini and reserved ¼ cup cooking water to pan; toss. Sprinkle with walnuts and cheese .
