Tortellini with Sausage, Spinach and Mushrooms

Ingredients
- 1 (9-oz) pkg refrigerated three-cheese tortellini
- ½ (16-oz) pkg smoked sausage, sliced
- 1 tsp minced garlic
- ½ (8-oz) pkg whole mushrooms, sliced
- 1 (5-oz) pkg baby spinach
- ¼ cup white wine (or use broth)
- ¼ cup chopped walnuts
- ¼ cup shredded Parmesan cheese
Instructions
- Cook tortellini according to package directions; drain over a small bowl, reserving ¼ cup cooking water.
- Meanwhile, cook sausage, garlic and mushrooms in a nonstick skillet over medium heat until sausage is browned.
- Add spinach and wine; cook 2 minutes or until spinach wilts.
- Add tortellini and reserved ¼ cup cooking water to pan; toss. Sprinkle with walnuts and cheese .
