Smoky Vegetable Egg Bake

Ingredients

  • ½ (16-oz) pkg kielbasa, cut into ½-inch pieces
  • ½ (8-oz) pkg sliced mushrooms
  • ½ cup chopped green bell pepper
  • ½ cup chopped red bell pepper
  • 1½ tsp olive oil
  • 6 large eggs, lightly beaten
  • ¼ tsp pepper
  • ⅛ tsp garlic salt

Instructions

  1. Preheat oven to 400°F. Cook kielbasa, mushrooms, and bell peppers in hot oil in a large skillet over medium heat 5 minutes or until kielbasa is browned, stirring often. Remove from skillet.
  2. Whisk together eggs, pepper, and garlic salt in a large bowl. Stir in kielbasa mixture. Pour into a lightly greased oven-safe skillet or 13- x 9-inch baking dish.
  3. Bake 20 to 25 minutes or until center is set.

Side Dish Ingredients

  • 2 cups arugula
  • ¼ cup fresh flat-leaf parsley leaves
  • ¼ cup fresh basil leaves
  • 3 Tbsp refrigerated lemon vinaigrette (such as Marzetti)
  • ½ cup quartered strawberries
  • ¼ cup thinly sliced red onion

Side Dish Instructions

  1. Combine arugula, parsley, and basil in a bowl. Add dressing, berries, and onion; toss. Season with pepper to taste.
