Smoky Vegetable Egg Bake
Strawberry-Arugula SaladIngredients
- ½ (16-oz) pkg kielbasa, cut into ½-inch pieces
- ½ (8-oz) pkg sliced mushrooms
- ½ cup chopped green bell pepper
- ½ cup chopped red bell pepper
- 1½ tsp olive oil
- 6 large eggs, lightly beaten
- ¼ tsp pepper
- ⅛ tsp garlic salt
Instructions
- Preheat oven to 400°F. Cook kielbasa, mushrooms, and bell peppers in hot oil in a large skillet over medium heat 5 minutes or until kielbasa is browned, stirring often. Remove from skillet.
- Whisk together eggs, pepper, and garlic salt in a large bowl. Stir in kielbasa mixture. Pour into a lightly greased oven-safe skillet or 13- x 9-inch baking dish.
- Bake 20 to 25 minutes or until center is set.
Side Dish Ingredients
- 2 cups arugula
- ¼ cup fresh flat-leaf parsley leaves
- ¼ cup fresh basil leaves
- 3 Tbsp refrigerated lemon vinaigrette (such as Marzetti)
- ½ cup quartered strawberries
- ¼ cup thinly sliced red onion
Side Dish Instructions
- Combine arugula, parsley, and basil in a bowl. Add dressing, berries, and onion; toss. Season with pepper to taste.
