Slow Cooker
Pork and Cabbage Stew

Ingredients
- ½ lb pork loin, cubed
- ¼ tsp pepper
- ⅛ tsp salt
- 1 Tbsp olive oil
- 2 cups angel hair coleslaw
- 1 organic Yukon Gold potato, peeled and cubed
- ½ onion, chopped
- 1 carrot, sliced
- 1 (14.5-oz) can BPA-free crushed organic tomatoes
- 2 (14.5-oz) cans low-sodium chicken broth
- ¼ tsp caraway seeds
Instructions
- Sprinkle pork with pepper and salt. Brown pork in hot oil in a large skillet over medium-high heat 5 to 7 minutes; transfer to a 4-quart slow cooker.
- Add slaw, potato, onion, carrot, tomatoes, broth, and caraway seeds to cooker; cover and cook on LOW 6 hours or until pork is tender.
