Pork and Cabbage Stew

Ingredients

  • ½ lb pork loin, cubed
  • ¼ tsp pepper
  • ⅛ tsp salt
  • 1 Tbsp olive oil
  • 2 cups angel hair coleslaw
  • 1 organic Yukon Gold potato, peeled and cubed
  • ½ onion, chopped
  • 1 carrot, sliced
  • 1 (14.5-oz) can BPA-free crushed organic tomatoes
  • 2 (14.5-oz) cans low-sodium chicken broth
  • ¼ tsp caraway seeds

Instructions

  1. Sprinkle pork with pepper and salt. Brown pork in hot oil in a large skillet over medium-high heat  5 to 7 minutes; transfer to a 4-quart slow cooker.
  2. Add slaw, potato, onion, carrot, tomatoes, broth, and caraway seeds to cooker; cover and cook on LOW 6 hours or until pork is tender.
