Honey-Soy-Glazed Salmon with Peppers
Ingredients
- 1 cup brown rice
- 2 large bell peppers, thinly sliced
- 1 medium red onion, thinly sliced
- 2 Tbsp toasted sesame oil, divided
- Kosher salt
- Pepper
- 3 Tbsp soy sauce
- 2 Tbsp honey
- 2 tsp grated peeled fresh ginger
- 4 (5-oz) fillets salmon
- Basil leaves, for serving
Instructions
- Heat oven to 425°F. Cook rice per package directions.
- Meanwhile, on large rimmed baking sheet, toss bell peppers and onion with sesame oil and ¼ tsp salt and roast until tender, 15 to 20 minutes.
- In 2-quart baking dish, whisk soy sauce, honey, ginger, remaining Tbsp toasted sesame oil and ¼ tsp pepper. Add salmon and turn to coat, transfer to oven and bake with vegetables until just opaque throughout, 15 to 20 minutes. Serve with rice and pepper mixture.
