Whole-Grain Salad with Chicken and Roasted Summer Vegetables

Ingredients
- 1 pint grape tomatoes
- 2 cups corn kernels
- 2 zucchini, cut into chunks
- 2 Tbsp minced garlic
- 5 Tbsp olive oil, divided
- 1 tsp salt
- ½ tsp pepper
- 2 (8.5-oz) pouches microwavable seven whole-grains mix
- 2 Tbsp basil paste
- 2 cups shredded rotisserie chicken
Instructions
- Preheat oven to 475°F. Toss together tomatoes, corn, zucchini, garlic, 1 Tbsp oil, salt, and pepper on a large rimmed baking sheet.
- Bake 10 to 15 minutes or until tomatoes begin to burst and zucchini is browned.
- Meanwhile, microwave grains according to package directions. Whisk together ¼ cup oil and basil paste.
- Combine grains, chicken, and vegetables; drizzle with basil oil mixture, and toss.
