Crispy Baked Zucchini Chips

Ingredients

  • ½ cup (or more) panko breadcrumbs
  • ¼ cup shredded Parmesan cheese
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 large or 2 medium zucchini, thinly sliced
  • 3 Tbsp milk (or use heavy cream)

Instructions

  1. Preheat oven to 425°F. Toss together breadcrumbs, cheese, salt, and pepper in a shallow bowl.
  2. Dip zucchini slices in milk, and then dredge in breadcrumb mixture, pressing gently to adhere. Arrange coated zucchini on a large greased baking sheet. Spray tops with olive oil cooking spray.
  3. Bake 15 minutes; turn and bake 10 minutes longer or until golden. Sprinkle with additional salt to taste.
