Crispy Baked Zucchini Chips
Ingredients
- ½ cup (or more) panko breadcrumbs
- ¼ cup shredded Parmesan cheese
- ¼ tsp salt
- ¼ tsp pepper
- 1 large or 2 medium zucchini, thinly sliced
- 3 Tbsp milk (or use heavy cream)
Instructions
- Preheat oven to 425°F. Toss together breadcrumbs, cheese, salt, and pepper in a shallow bowl.
- Dip zucchini slices in milk, and then dredge in breadcrumb mixture, pressing gently to adhere. Arrange coated zucchini on a large greased baking sheet. Spray tops with olive oil cooking spray.
- Bake 15 minutes; turn and bake 10 minutes longer or until golden. Sprinkle with additional salt to taste.
