Loaded Waffle Fries
Apple Salad
Ingredients
- 1 (22-oz) pkg frozen waffle fries
- 1½ lb ground beef
- 1 (1-oz) envelope taco seasoning mix
- ¼ cup water
- 1 (8-oz) pkg shredded Mexican-blend cheese
- 1 (8-oz) carton sour cream
- 1 (8-oz) container guacamole
- ¼ cup chopped fresh cilantro
- 1 (16-oz) container fresh salsa
Instructions
- Preheat oven to 450°F. Arrange fries in a single layer on a greased rimmed baking sheet. Bake 15 to 20 minutes or until golden brown and crisp; season with salt and pepper to taste.
- Meanwhile, cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Stir in taco seasoning and water; simmer 5 minutes or until very thick.
- Spoon meat mixture over fries; sprinkle with cheese.
- Return fries to oven; bake 5 minutes longer or until cheese is melted. If desired, top with sour cream, guacamole, cilantro, and salsa.
- Serve loaded fries with Ranch dressing, queso dip, or ketchup.
Side Dish Ingredients
- 2 apples (preferably sweet), finely chopped
- ¼ cup chopped celery
- ¼ cup raisins (or use dried cranberries)
- 2 Tbsp mayonnaise
- 1 Tbsp lemon juice
- 1 Tbsp honey
Side Dish Instructions
- Combine apples, celery, and raisins in a bowl.
- Mix mayonnaise, lemon juice, and honey in a small bowl; add to fruit, and toss. Chill until ready to serve.
