Almond-Crusted Pork

Ingredients

  • 6 (5-oz) boneless center cut pork loin chops
  • ½ tsp salt
  • ½ tsp pepper
  • 2 large eggs
  • 1 cup almond flour
  • 2 Tbsp olive oil
  • 1 Tbsp butter
  • 1 Tbsp chopped fresh rosemary

Instructions

  1. Sprinkle pork with salt and pepper. Beat eggs lightly in a shallow bowl. Place flour in a second shallow bowl. Dip pork in egg, allowing excess to drip off. Dredge in flour.
  2. Cook pork, in batches, in hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until well browned. Add butter and rosemary; cook 1 minute, tilting skillet slightly to spoon melted butter over pork.

  • 2 heads cauliflower (about 3 lb), cut into florets
  • 3 Tbsp butter
  • ¼ cup whole milk (or use sour cream)
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Steam cauliflower in a steamer basket over boiling water 12 to 15 minutes or until tender. Carefully transfer cauliflower to a food processor.
  2. Add butter and milk; pulse until smooth, scraping sides as needed. Stir in salt and pepper.
