Pecan, Coconut, and Cocoa Bites

Ingredients

  • 1½ cups pecan halves
  • 4 dried dates
  • ⅓ cup unsweetened baking cocoa
  • 1 tsp vanilla extract
  • ⅛ tsp salt
  • 1 Tbsp coconut oil, melted
  • ¾ cup unsweetened shredded coconut, divided

Instructions

  1. Preheat oven to 350°F. Place nuts on a baking sheet. Bake 6 to 10 minutes or until toasted; cool.
  2. Process dates in a food processor until a paste forms and dates clump together. Add nuts, cocoa, vanilla, and salt; blend until chopped.
  3. With processor still running, slowly drizzle in oil; process until oil is blended, scraping sides as needed.
  4. Combine date mixture and ½ cup coconut. Shape mixture into 12 balls; roll in ¼ cup coconut.
