Pecan, Coconut, and Cocoa Bites

Ingredients
- 1½ cups pecan halves
- 4 dried dates
- ⅓ cup unsweetened baking cocoa
- 1 tsp vanilla extract
- ⅛ tsp salt
- 1 Tbsp coconut oil, melted
- ¾ cup unsweetened shredded coconut, divided
Instructions
- Preheat oven to 350°F. Place nuts on a baking sheet. Bake 6 to 10 minutes or until toasted; cool.
- Process dates in a food processor until a paste forms and dates clump together. Add nuts, cocoa, vanilla, and salt; blend until chopped.
- With processor still running, slowly drizzle in oil; process until oil is blended, scraping sides as needed.
- Combine date mixture and ½ cup coconut. Shape mixture into 12 balls; roll in ¼ cup coconut.
