Ingredients
- 1 (16-oz) pkg ground Italian sausage
- 1 (3.5-oz) pkg sliced pepperoni, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (32-oz) carton low-sodium chicken broth
- 1½ cups low-sodium diced tomatoes
- 1½ cups low-sodium tomato sauce
- 2 Tbsp low-sodium tomato paste
- 2 tsp Italian seasoning
- 1¾ cups shredded mozzarella cheese
Instructions
- Cook sausage, pepperoni, onion, and garlic in a large Dutch oven 8 to 10 minutes or until sausage is browned and crumbly; drain well, and return to pot.
- Stir in broth, tomatoes, tomato sauce, tomato paste, and Italian seasoning. Bring to a boil; reduce heat, and simmer 20 minutes. Stir in cheese just before serving.
Side Dish Ingredients
- 5 cups chopped romaine lettuce
- ½ cup olive oil vinaigrette dressing
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Toss lettuce with dressing; sprinkle with cheese.
