Chili-Lime Flank Steak

Ingredients

  • ¼ cup lime juice
  • 2 tsp honey
  • 2 cloves garlic, minced
  • ¾ tsp chipotle chili powder
  • 1 Tbsp chopped fresh cilantro
  • 2 lb flank steak, trimmed
  • ¼ tsp salt

Instructions

  1. Combine lime juice, honey, garlic, chipotle chili powder, and cilantro in a large zip-top plastic freezer bag; add steak. Seal and chill 4 hours or overnight.
  2. Preheat broiler. Remove steak from marinade; discard marinade. Sprinkle steak with salt. Place steak on a lightly greased rack in a broiler pan.
  3. Broil 5 minutes per side or to desired doneness. Let stand 5 minutes before slicing thinly across the grain.

  • 1 (16-oz) container cored pineapple, chopped
  • 2 red bell peppers, chopped
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp fresh lime juice

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
