Moroccan Steak with Oranges and Olives
Caesar Romaine Salad
Ingredients
- 1½ lb flank steak
- 2 oranges
- ¼ cup olive oil, divided
- 1 Tbsp chopped fresh mint
- 1 tsp garlic powder
- 1 tsp salt
- ⅛ tsp cayenne pepper
- ¾ cup pitted kalamata olives
Instructions
- Cut steak across the grain into ¼-inch-thick slices. Peel and section oranges over a bowl, reserving ½ cup juice.
- Combine 2 Tbsp oil, mint, garlic powder, salt, and cayenne pepper in a large bowl; add steak, and toss.
- Cook steak, in batches, in 2 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side or until browned.
- Return all steak to skillet; add orange sections, orange juice, and olives. Cook 2 to 3 minutes or until most of liquid is evaporated.
Side Dish Ingredients
- ¼ cup mayonnaise
- 2 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 3 romaine lettuce hearts, chopped
Side Dish Instructions
- Whisk together mayonnaise, lemon juice, oil, garlic, and cheese in a bowl. Add lettuce, and toss.
