Lemon-Basil Grouper
Parmesan Asparagus and Bell Pepper
Ingredients
- 1½ lb grouper fillets (or use cod or flounder)
- ¼ tsp salt
- ¼ tsp pepper
- 1 lemon
- 6 Tbsp butter, softened
- ¼ cup chopped fresh basil
- 2 cloves garlic, minced
Instructions
- Preheat oven to 400°F. Place grouper in a baking dish, and season with salt and pepper.
- Grate zest from lemon to equal 2 tsp.
- Stir together lemon zest, butter, basil, and garlic. Dollop over fish. Squeeze lemon juice over fish.
- Bake 10 to 12 minutes or until fish flakes with a fork.

- 1½ lb asparagus, trimmed
- 1 red bell pepper, diced
- 2 Tbsp olive oil
- ½ tsp kosher salt
- ½ tsp pepper
- ¼ cup grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 400°F. Toss together asparagus, bell pepper, oil, salt, and pepper on a rimmed baking sheet. Bake 10 minutes or until vegetables are browned and tender. Sprinkle with cheese.
