Greek Shrimp Salad

Ingredients

  • 2 lb unpeeled, medium-size raw shrimp, peeled and deveined
  • ½ cup olive oil dressing, divided
  • 2 romaine lettuce hearts, shredded
  • 1 pint grape tomatoes, halved
  • 1 cup pitted kalamata olives
  • 1 cup sliced red onion
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup crumbled feta cheese

Instructions

  1. Toss shrimp with 3 Tbsp dressing; let stand 10 minutes.
  2. Sauté shrimp in a lightly greased nonstick skillet 5 minutes or just until shrimp turn pink.
  3. Place lettuce, tomatoes, olives, onion, and shrimp in a bowl. Season with salt and pepper. Toss with 5 Tbsp dressing. Sprinkle with cheese.
