Greek Shrimp Salad
Ingredients
- 2 lb unpeeled, medium-size raw shrimp, peeled and deveined
- ½ cup olive oil dressing, divided
- 2 romaine lettuce hearts, shredded
- 1 pint grape tomatoes, halved
- 1 cup pitted kalamata olives
- 1 cup sliced red onion
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup crumbled feta cheese
Instructions
- Toss shrimp with 3 Tbsp dressing; let stand 10 minutes.
- Sauté shrimp in a lightly greased nonstick skillet 5 minutes or just until shrimp turn pink.
- Place lettuce, tomatoes, olives, onion, and shrimp in a bowl. Season with salt and pepper. Toss with 5 Tbsp dressing. Sprinkle with cheese.
