Bean and Cheese Burritos

Ingredients

  • 1 (8-oz) pkg microwavable white rice
  • 1 (15-oz) can refried beans (or refried black beans)
  • 1 cup sour cream
  • 1 (8-oz) container fresh salsa
  • 6 burrito-size flour tortillas
  • 2 cups freshly shredded Cheddar cheese
  • Shredded lettuce
  • ¼ cup chopped fresh cilantro
  • 2 avocados, pitted and chopped

Instructions

  1. Microwave rice according to package directions.
  2. Combine refried beans with a spoonful each of sour cream and salsa in a saucepan; heat over medium-low heat, stirring to blend.
  3. Heat tortillas in microwave. To assemble burritos, spread a layer of refried bean mixture over tortillas. Top with rice, cheese, lettuce, cilantro, and a small amount of sour cream and salsa. Season with salt and pepper to taste.
  4. For each tortilla, fold side closest to you over filling, then fold right and left sides toward center; tightly roll up burrito.
  5. Serve with avocado and remaining sour cream, salsa, and cilantro.

Side Dish Ingredients

  • 3 cups frozen corn, thawed
  • 1 green bell pepper, very thinly sliced
  • 2 Tbsp olive oil
  • ½ tsp salt

Side Dish Instructions

  1. Preheat oven to 450°F.
  2. Toss together all ingredients on a rimmed baking sheet. Bake 20 minutes or until vegetables begin to brown, stirring once.
