Mozzarella and Pear Grilled Cheese Sandwiches

Ingredients

  • 3 Tbsp sugar
  • 1 Tbsp ground cinnamon
  • 6 Tbsp butter, softened
  • 12 slices sourdough bread
  • 6 pears, thinly sliced
  • 12 slices mozzarella cheese

Instructions

  1. Combine sugar and cinnamon in a small bowl. Spread butter on one side of each bread slice.
  2. Arrange pear slices on unbuttered sides of 6 bread slices; sprinkle with sugar mixture.
  3. Top pears with mozzarella and remaining bread slices, buttered sides up.
  4. Cook sandwiches in a large skillet, in batches, over medium heat 4 minutes per side or until golden.

Side Dish Ingredients

  • 16 small red potatoes, cut in half
  • 3 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ (10-oz) pkg baby spinach
  • 6 green onions, chopped

Side Dish Instructions

  1. Arrange potatoes in a steamer basket over boiling water. Cover and steam 15 minutes or until tender.
  2. Whisk together oil, lemon juice, salt and pepper in a large bowl. Add spinach, green onions, and potatoes, tossing to coat.
