Mozzarella and Pear Grilled Cheese Sandwiches
Warm Potato Salad with Spinach
Ingredients
- 3 Tbsp sugar
- 1 Tbsp ground cinnamon
- 6 Tbsp butter, softened
- 12 slices sourdough bread
- 6 pears, thinly sliced
- 12 slices mozzarella cheese
Instructions
- Combine sugar and cinnamon in a small bowl. Spread butter on one side of each bread slice.
- Arrange pear slices on unbuttered sides of 6 bread slices; sprinkle with sugar mixture.
- Top pears with mozzarella and remaining bread slices, buttered sides up.
- Cook sandwiches in a large skillet, in batches, over medium heat 4 minutes per side or until golden.
Side Dish Ingredients
- 16 small red potatoes, cut in half
- 3 Tbsp olive oil
- 1 Tbsp fresh lemon juice
- ½ tsp salt
- ¼ tsp pepper
- ½ (10-oz) pkg baby spinach
- 6 green onions, chopped
Side Dish Instructions
- Arrange potatoes in a steamer basket over boiling water. Cover and steam 15 minutes or until tender.
- Whisk together oil, lemon juice, salt and pepper in a large bowl. Add spinach, green onions, and potatoes, tossing to coat.
